The Merlo family has been breeding piedmontese beef cattle for generations: year by year, the rest of the farm developed around this activity. They breed females and geldings, all with certified Piedmontese pedigree (their origin being granted by the provincial breeders association A.P.A., Associazione Provinciale Allevatori). The cattle eats only non-GMO food such as broad beans, corn, barley, bran and hay; moreover, during summertime, it can graze in a semi-wild state in the farm fields. In order to grant the best traceability and genuineness of the product, the farm breeds its own calves, and buys some heads of cattle from some small local breeders. 
Pig meat is used to prepare traditionally-made products, with no preservatives nor artificial flavours, such as:
traditional salami, typical piedmontese cooked salami, bacon, flavoured lard, ham...poni

Each year the Merlos breed 5 or 6 beef breed oxen, an unusual activity nowadays, which is unprofitable but brings nonetheless a high-quality meat.
Besides oxen, they rear pigs (in semi-wild state, too), which are used to produce excellent sausages. The breeding quality and care are demonstrated by the fact that pigs live up to one year and a half, against the 6-month average of most stock farms. 

Animals are slaughtered directly in a slaughterhouse near the stock farm (so they do not undergo the transport trauma), according to CEE legislation, and controlled by the local A.S.L. 19 Veterinaria (local health unit) during all the slaughtering phases.
Moreover, the slaughterhouse can be used by other small local cattle farmers and butchers through the Comunit√† Montana (Mountain Community).
